The debut wines showcased the Hunter Valley Semillon, Hunter Valley Shiraz and a Chardonnay both from Tumbarumba. For Mercer these wines are a passion project, only to be produced when great parcels of fruit come into the winery. They are built to be age-worthy and exemplary examples of a region. Often served by Alison or Aaron Mercer, this experience should be booked in advance so we can cater to your group.
Aaron Mercer is one of the most versatile winemakers in the Valley, known for his impact on organic and preservative-free wine; he is forging forward with new, vegan-friendly, sustainable varietals from all over NSW.
